Shirley, a member of Kidney Connect, kindly tested these muffins for us. She said they were delicious, that they were nice and moist and that the raspberry’s added a nice ‘tang’.
This one pot, complete meal is incredibly easy and super flavourful. The recipe combination provides a moderate amount of pasta per person with lean chicken and a generous serving of vegetables; which is a good thing as many people tend to eat larger than wise portions of higher carbohydrate pasta.
Before it hits the grill, this chicken is marinated in an Asian-inspired ginger-garlic marinade. The chicken can be hot off the grill or barbecued ahead of time and used cold. Marinade chicken overnight for best results.
I came across this in a cookbook that we received with our new barbeque last year and as soon as I found a recipe that had no salt added I had to try it. Happily it was a hit with my entire family and I hope you will enjoy it too!
