Savory Crustless Quiche

Savory Crustless Quiche

Ingredients

Basic Crustless Quiche Mixture:
3
large eggs
1 cup
2% milk (250 ml)
1/2 cup
flour (125 g)
Savory Filling:
3
slices diced bacon
1 cup
onions, diced (250 g)
1 cup
mushrooms, diced (250 g)
2/3 cup
green beans, canned, unsalted (100g)
pinch of salt and pepper or other spices are optional

Directions

Crack eggs in a bowl and whisk in each ingredient, dairy, then flour until most of the lumps are smoothed out. Add salt, pepper and spices if using.

Note: You could bake and serve this mixture on its own.

In a skillet on medium heat, cook the filling ingredients until heated through and bubbling – approximately 15-20 minutes.

Note: Hold the green beans and add at the very end to prevent them from getting mushy.

Heavily cover a deep-dish pie tin or an 8×8 inch cake pan with cooking spray, making sure it is well coated or the quiche will stick. Pour the cooked filing (2-3 cups) into the greased baking pan and spread lightly to distribute evenly. Top with the crustless quiche mixture and bake at 350 degrees for 40-45 minutes, until a knife comes out clean and the top is golden brown.
