- 9 small carrots (14 cm), peeled
- 2 tsp Dijon mustard
- 1 Tbsp lemon juice
- 2 Tbsp extra virgin olive oil
- 1-2 tsp honey, to taste
- ¼ tsp salt
- ¼ tsp freshly ground pepper, to taste
- 2 Tbsp parsley, chopped
- 1 scallion, finely sliced
- Grate the carrots in a food processor. Set aside.
- In a salad bowl, combine Dijon mustard, lemon juice, honey, olive oil, salt and pepper. Add the carrots, fresh parsley and scallion and toss well. Cover and refrigerate until ready to serve.
NOTE: Depending on the sweetness of the carrots, you may want to add more or less honey.
