Spiced Apple Coffee Cake

Chef’s Notes:

  • Cake batter will be thick. Spread with spatula to have an even layer.
  • Not recommended for people with diabetes as it is high in carbohydrates.

Spiced Apple Coffee Cake

Ingredients

  • 3 Apples, Cortland, Golden Delicious or Gala
  • 1 tbsp. Cinnamon
  • 2/3 Cup Sugar
  • 3 Cups Flour, All Purpose
  • 1 Cup Canola Oil
  • 3 Eggs, large, lightly beaten
  • 1 Cup Apple sauce, unsweetened
  • 1 tsp Cream of Tartar
  • ½ tsp Baking Soda
  • 2 tsp Vanilla Extract

Directions

  1. Preheat oven to 350 degrees F.
  2. Spray spring form or round cake pan with cooking spray, and dust with flour. Tap slightly to remove excess flour.
  3. Peel and cut apple in to medium sized cubes, place in water with 1 Tbsp of Lemon juice.
  4. Combine cinnamon and 1/3 of the sugar, place drained apples in mixture and toss.
  5. Combine remaining dry ingredients together, and separately combine all wet ingredients.
  6. Mix in apples and sugar to the wet ingredients. Add wet ingredients to dry.
  7. Mix batter until it just comes together.
  8. Pour mixture into cake pan and bake for 75 minutes or if tooth pick comes out clean.
  9. Let stand on baking rack to cool.
  10. Serve with whipped topping.
  11. Enjoy!
