Mediterranean Panini

This flavorful Panini is an easy lunch snack using roast beef leftovers.

Ingredients

  • 4 panini buns, white,
  • 3 tbsp (45 mL) mayonnaise
  • 1 tbsp (15 mL) pesto sauce
  • 2 cups (500 mL) eggplant, red or green peppers, zucchini, and/or onions.
  • 2 cups (500 mL) slivered thinly sliced cooked roast beef

1. Slice buns in half; set aside.
2. Mix mayonnaise with pesto sauce; spread on inside of each bun.
3. Top each with 1/2 cup (125 mL) roasted vegetables and 1/2 cup (60g) sliced roast beef.
