Tofu Lettuce Wrap

Tofu Lettuce Wrap

These kidney-friendly Tofu Lettuce Wraps are quick to make and filled with nutritious ingredients.

Ingredients

1 tbsp
Vegetable oil
3
green onions, thinly sliced
1
 Thai chili, diced (optional)

garlic cloves, minced
1
extra firm tofu, crumbled or cut small
3
carrots, peeled and grated
1 tbsp
low sodium soy sauce
0.5 tsp
oyster sauce or vegetarian option
4 tbsp
fresh cilantro, finely chopped
4 tbsp
fresh basil, finely chopped
8
iceberg or butter lettuce

Directions

Food safety Tips: 

  • Wash hands with soap and warm water for at least 20 seconds. 
  • Clean all countertops and equipment used for food preparation. 
  • Gently rinse all produce under cool running water. Use a clean vegetable brush to scrub carrots before peeling and grating. 
  • Put leftovers away within 2 hours or sooner if they are in a warm location.  Reheat leftovers to an internal temperature of 74°C (165°F). Discard uneaten leftovers after they have been reheated. 

Instructions:

  • Instructions: 
  1. In a skillet, heat oil, garlic, green onions & red chilies until sizzling. 
  2. Add tofu, low-sodium soy sauce, oyster sauce, and half each of the cilantro and basil. Cook for 5 minutes. 
  3. Fill lettuce leaves with the tofu mixture and top with grated carrots, remaining cilantro, and basil. 

Note: to make this a more filling or turn it into a main, add some cooked brown rice under the tofu mixture, and steamed vegetables
