Preparation:
- In a large pot, heat the olive oil over medium heat. Add the onion and ginger and sauté for 5-7 minutes, until fragrant.
- Add the carrots and vegetable broth, bringing the mixture to a simmer. Cook for 20 minutes, or until the carrots are tender.
- Use an immersion blender or transfer to a blender and puree the soup until smooth.
- Season with fresh ground pepper and lemon juice.
