Apple-Cranberry Cake

This delicious cake is filled with cranberry and layered with spiced apples!

Ingredients

1/3 cup
butter (unsalted)
3/4 cup
sugar
2
eggs
1 1/2 cups
all purpose flour
1 1/2 tsp
baking soda
zest of 1 lemon
2/3 cup
yogurt (plain)
1 cup
cranberries
2
apples (peeled and sliced)
1/2 cup
brown sugar
1 1/2 tsp
cinnamon

Food safety tips:

  • Wash hands with soap and warm water for at least 20 seconds.   
  • Clean all countertops and equipment used for food preparation.   
  • Gently rinse all produce under cool running water. 
  • Use separate equipment for handling raw food and cooked food. 
  • Do not eat raw dough or batter as it may contain bacteria that could cause you to become sick. 

Preparation:

  • Preheat oven to 350°F. Line a 10″ cake pan with parchment.
  • Beat the butter and sugar together. 
  • Add the eggs one at a time and mix.
  • Alternate adding the sifted dry ingredients and yogurt.
  • Spread half of the batter in a cake pan.
  • Arrange cranberries on top and sprinkle with brown sugar and cinnamon.
  • Spread the remaining batter over top.
  • Arrange apple slices and sprinkle with brown sugar and cinnamon.
  • Bake for 50-60 minutes or until well baked.
