No Bake Energy Bites

No Bake Energy Bites 

These energy bites are quick to make, naturally sweet, and perfect for a healthy boost any time of day.

Ingredients

1 cup
peanut butter (no added salt) *
2
bananas, mashed
3 tbsp
honey **
1 pinch
cinnamon
3 cups
old-fashioned oat
* You can substitute with other nut butters, but the nutritional analysis of the recipe will change.
** You can substitute with maple syrup, but the nutritional analysis of the recipe will change.

Directions

Servings: 24 bite-sized treats

Serving size: 1 bite (about 30 g)

Food Safety Tips:

  • Wash your hands with soap and warm water for at least 20 seconds.   
  • Clean all countertops and equipment used for food preparation.   

Preparation:

  1. Using a food processor with blades, pulse the oats until the consistency is that of flour (you just made your own oat flour!). 
  1. In a large mixing bowl, mash the bananas into a puree. 
  1. Add the remaining ingredients to the bowl, and blend until a dough forms. 
  1. Shape the dough into bite-sized balls and sprinkle with seeds or cinnamon. 

Tip: You can also use this batter to make energy bars. However, you need to spread batter on baking sheet and bake at 375°F for about 30 minutes until golden brown. Then cut the bars or break the cooked sheet up into portions.
