Food Safety Tips:
- Wash hands with soap and warm water for at least 20 seconds.
- Clean all countertops and equipment used for food preparation.
- Gently rinse all produce under cool running water.
Preparation:
- Slice the top third of each clementine off with a sharp knife. Use a small spoon to gently remove the flesh from the skin. Place clementine cups and tops into the freezer.
- Over a medium bowl, juice clementines and lemon using a sieve to catch any pulp or seeds.
- Boil sugar and water over medium heat, then allow to cool. Add this to the juice along with sparkling water and stir to combine.
- Pour into a shallow dish and freeze for 2 hours. Scrape with a fork and return to the freezer for another hour. Scrape again and then spoon into frozen clementine cups. Store in the freezer. Serve as is or with a dollop of whipped cream.
