Clementine Granita

This is a simple, refreshing, and light recipe that’s perfect for cooling off during the summer

Ingredients

clementines, rinsed and dried
1
lemon
¼ cup
granulated sugar
¼ cup
water
¼ cup
sparkling water

Directions

Food Safety Tips:

  • Wash hands with soap and warm water for at least 20 seconds.   
  • Clean all countertops and equipment used for food preparation.   
  • Gently rinse all produce under cool running water. 

Preparation:

  • Slice the top third of each clementine off with a sharp knife. Use a small spoon to gently remove the flesh from the skin. Place clementine cups and tops into the freezer. 
  • Over a medium bowl, juice clementines and lemon using a sieve to catch any pulp or seeds. 
  • Boil sugar and water over medium heat, then allow to cool. Add this to the juice along with sparkling water and stir to combine. 
  • Pour into a shallow dish and freeze for 2 hours. Scrape with a fork and return to the freezer for another hour. Scrape again and then spoon into frozen clementine cups. Store in the freezer. Serve as is or with a dollop of whipped cream.
