R\u00f4tir jusqu&rsquo;\u00e0 ce que la chair soit tr\u00e8s tendre et se d\u00e9tache facilement de la peau, environ 1 heure selon la taille de l&rsquo;aubergine. Laisser refroidir.<\/li>\n<li>Pendant ce temps, couper la pointe des gousses d&rsquo;ail. Placez les gousses d\u2019ail dans un carr\u00e9 de papier d&rsquo;aluminium. Rabattre les rebords de la feuille et replier ensemble pour former une papillote scell\u00e9e herm\u00e9tiquement. R\u00f4tir avec l&rsquo;aubergine jusqu&rsquo;\u00e0 ce qu\u2019elles soient tendres, environ 20 minutes. Laisser refroidir. R\u00e9duire les gousses en pur\u00e9e \u00e0 l\u2019aide d\u2019un presse-ail.<\/li>\n<li>Avec une cuill\u00e8re, \u00e9vider la chair de l&rsquo;aubergine et le placer dans le bol d&rsquo;un robot culinaire. Ajouter la pur\u00e9e d&rsquo;ail, l&rsquo;huile et le jus de citron.
