A nice, simple recipe which makes a great weekend breakfast!
- 2 eggs, lightly beaten
- 1/8 tsp (1/2 mL) mint
- ½ cup (125 mL) milk
- ¾ cup (175 mL) apple sauce
- 4 slices white bread
In a bowl, mix eggs, milk and mint.
Add applesauce to the mixture.
Melt a dot of margarine on a non stick pan on medium high heat.
Soak bread slices in mixture and transfer to pan.
When underside has browned, flip bread and cook other side.
Top with syrup.

This tasted very similar to my normal French toast. I chose to gently fry the apples and use them as a topping instead of incorporating them into the milk/egg mixture.
